Carsten Nicolai and Olaf Bender’s light/sound installation White Line Light at Strachan Avenue Old Police Station from Toronto’s 2007 Nuit Blanche is still one of my best NB experiences. (Sad that it's been all going downhill now year after year.) Sorry I couldn't find a good clip of the Toronto installation online. Here's a later iteration in the Hague:

I was very pleased to see Charles Stankievech's The Soniferous Æther Of The Land Beyond The Land Beyond showing here again at Prefix ICA last week.
